Fancy Vegan Ramen
At the Japanese market near my house, I was delighted to find some ramen that is actually vegan!! But plain ramen can get boring, so sometimes I add greens and veggies - it is more exciting and healthy! (Well as healthy as ramen gets anyway...) This time I sliced up two carrots thinly (then thinner you slice them the faster they will cook - and the easier they will be to chew if you like to leave them crispy) and a green onion. I added half of the carrots to the water before it can to a boil, and the other half when I added the noodles. (I wasn't sure how fast/well they would cook so this was my little test). I added half of the green onion just a bit before it was done, and the other half I save to garnish the top of my soup. The carrots I put in the water first were a bit over done for my tastes, but still good; the ones I added with the noodle were just right, softer, but still crispy.
